Mediterranean Green “Reset” Soup

An ultra-light green soup, rich in chlorophyll and minerals, perfect for a “reset” without feeling deprived. Zucchini, spinach, celery, lemon and green peas: a Mediterranean combo that reloads essential nutrients while staying under 150 calories per bowl. Ideal for a light evening meal, a reset after indulgence, or a gentle ritual to get the body back on track — calmer digestion, lighter silhouette, clear mind.
🌿 Ingredients (for 2–3 bowls)
Green base
- 3 medium zucchinis
- 2 handfuls of fresh spinach
- 1 celery stalk
- 200 g green peas (save a handful for topping)
Aromatics
- 1 garlic clove
- 1 lemon (juice)
- 1 tbsp olive oil
- Salt & pepper
To serve
- Extra green peas
- Fresh parsley or chives
- A drizzle of olive oil
- Lemon zest (optional)

🔥 Preparation
- In a pot, sauté the minced garlic and celery in 1 tbsp olive oil.
- Add the chopped zucchinis and cover with water or light broth. Cook for 12 minutes.
- Add the spinach and most of the peas. Cook for 3 more minutes.
- Blend until smooth with the lemon juice. Adjust salt & pepper.
- Serve with whole peas, fresh herbs and a drizzle of olive oil.
